Firstly starting with the basic difference:-
The camera roll is actually on your device (IPHONE), whereas photo stream is in 'the cloud'.
When you take photos from your iphone it goes into the camera roll, which is visible only on your iphone.
WHILE
If you have enabled the photo stream and then you take the photo on your iPhone it's also copied to your photo stream and is instantly visible on your iPad, Mac, etc. as well as your iPhone.

When using the iPhone camera for taking and storing images you will come across two albums i.e,
the Photo Stream and Camera Roll.
You may be confused between the two.
So below i am explaining you the differences between them.
The iPhone stores photos into two albums, ‘Photo Stream’ and the ‘Camera Roll’.
*** Both the Camera Roll and Photo Stream albums allow a photo to be “shared” through email, tweet, print and message.
*** This is done by opening up Photo Stream or Camera Roll & and tapping on the icon (top right rectangle/arrow icon of the iPhone screen) and selecting the images required.
*** The camera roll is actually on your device. If you take a picture on your iPhone it goes into your camera roll and is visible only on your iPhone.
*** The Photo Stream folder is in the iCloud where it pushes the photos out to other apple devices or applications.
*** The Photo Stream album can be found in the iPhoto application, residing in the lefthand column under "Recent Photo Stream".
